What You’ll Need

Equipment: A 10″ or 12″ cast iron skillet; mixing bowl and fork; tongs; chef’s knife; cutting board

Ingredients: 2 1/2 cups of all purpose flour (or gluten-free 1:1 flour), a packet of rapid rise yeast, 2 TSP salt, 1 cup warm water, 5 TB olive oil, divided into 2 and 3, plus your toppings!

Instructions

1. Put the flour, yeast, and salt in a pot, and mix it a bit with a fork to get the ingredients evenly distributed.
2. Add the warm water and 2 TB of oil to the bowl and mix with a fork until starts to form the dough.
3. Knead dough in the bowl or on a lightly floured surface until well mixed and cohesive dough.
4. Cover dough, and then let it rise for 20 minutes.
5. After the dough rises, put onto a cutting board and divide it in two.
6. Form the crust by adding 1 TB of oil into a preheated cast iron skillet and coat the surface. Take on of the dough halves and push it towards the edges of the skillet. Drizzle 1/2 TB of oil around the edge.
7. Place the skillet on a grate over your campfire, which should be an active and warm fire. Cook for 3-5 minutes until the bottom is beginning to turn golden brown. Peek at 3 minutes to make sure it’s firming up and check on it.
8. Pull skillet off the fire and let it rest on a surface that can handle the heat. It will be very hot!
9. Lift crust and flip it so the uncooked side is hidden in skillet. Add your toppings. Cover the pizza with a cast iron cover or a sheet of foil and put it back on the campfire.
10. Cook another 3-5 minutes until it’s golden brown. Remove the lid or foil when the cheese has melted to let the steam escape while it finishes cooking.
11. Remove the skillet from the campfire, transfer the pizza to a plate carefully.
12. Repeat with the other half of the dough.

Suggested Topping Combinations

The Classic: Mozzarella cheese, tomato sauce, perhaps with some pepperonis.
The Veggie: Choose your favorite cheese (non-dairy if preferred) or cheeses and cover it with your favorite sliced veggies! Think: peppers, grilled onions, black olives, broccoli.
The Fancy: Mozzarella, Proscuitto, artichokes, with lots of sauce options…or skip the cheese and go with just olive oil and garlic.
Cheeseburger: Cooked ground beef, ketchup, mustard, lettuce, tomato, and pickles!
Hawaiian: Tomato sauce, mozzarella cheese, ham or Canadian bacon or bacon (or a combination), pineapple
